How to Make Creamy Anti-Cancer Broccoli Soup

Most people are not fans or broccoli, despite its numerous health benefits.  This veggie is an excellent source of sulforaphane, a compound which acts as potent anti-cancer agent.  It is produced when myrosinase reacts with glucoraphin, a reaction mostly caused by chewing of the veggie. Young sprouts are the richest in glurocaphanin, meaning that they have the highest ability to produce sulforaphane. As a matter of fact,they have more than 50 times the amount of sulforaphane when compared to the amount found in mature broccoli.

The goal is to cook broccoli in a way that it preserves its nutrients and enzymes.


When making creamy broccoli soup, the myrosinase enzymes are typically lost due to the simmering process. But, the method of cooking broccoli presented in this article involves light steaming, which retains the enzymes.  Besides, the soup is extremely tasty!

Ingredients:


  • 2 tbsp extra virgin olive oil
  • 2 medium stalks celery, finely chopped
  • 1 medium onion, finely chopped
  • 4 cups fresh broccoli, including stems
  • 2 medium potatoes, peeled and cubed
  • 1 cup unsweetened almond milk
  • 2 ½ cups chicken broth
  • Black pepper and salt
  • ¼ cup feta cheese

Instructions:

First, heat the oil in a large pot and sauté the celery stalks and onion for 4 minutes.  Add the broccoli stems and potatoes, sauté for 2 more minutes.  Then, add the almond milk and chicken broth and bring the mixture to boil.

Season with pepper and salt, reduce heat, and simmer for about 20 minutes.  When done and veggies softened, blend the mixture in a blender.  Serve and garnish with feta cheese,  to support the production of sulforaphane.

Fruits are beneficial for the overall heath, due to their robust nutritional profile, including phenols folic acid, fiber, antioxidants, and high vitamin C content.  What`s more, studies show that fruits also contain compounds with potent anti-cancer properties.

Specifically, fruits like grapes, tomato, lemon, apple, pineapple, avocado, and banana have been found to be the most effective in both preventing and fighting off cancerous cells.

1.     Grapes

Cancer research has found that the grape seed extract has the ability to kill three-fourths of leukemia cells by stimulating JNK, a protein which causes apoptosis in cancerous cells.  Resveratrol, an antioxidant in grape seeds has been shown to affect natural death of cancer cells in prostate, breast, skin, stomach, bowel, and lungs.

2.     Citrus Fruits

Citrus fruits are packed with vitamin C as well as dietary fiber, beta-carotene, folate, and potassium.  They are particularly effective against larynx cancers, mouth cancers, stomach cancers, and pharynx cancers.

It has been scientifically shown that citrus fruits are beneficial for arthritis, gallstones, and heart disease, too.  A few studies have found that lemon has the ability to fight cancer, due to its vitamin C content which kills off malignant cells while leaving the healthy ones intact.

5.     Banana

6.     Kiwi

Kiwi is loaded with vitamin C, an antioxidant which prevents free radical damage. It also contains carotenoids and flavonoids, compounds which protect the DNA from the damage or oxidative stress.  Kiwi is especially effective against cancers like lung cancer, stomach cancer, breast cancer, and liver cancer.

Also known as Graviola, soursop is up to 10,000 times more effective in killing cancer when compared to chemotherapy drugs.  Extracts of this tree kill malignant cells in twelve types of cancer, including pancreatic cancer, colon cancer, prostate cancer, breast cancer, and lung cancer.
